Greek Burgers
It's grilling season and if you're like me, I'm always on the look out for new meal ideas. These burgers are super tasty and healthy with all their great ingredients. Simply said my daughter was like "these are a make again" recipe.
Greek Burgers
1 1/4 lbs. ground turkey (you could use beef or even lamb or a mixture)
6 halves sun dried tomatoes, chopped
1 medium red onion, chopped (minus a few slices as a topping)
1/2 tsp. minced garlic
2 oz. frozen spinach, chopped
1/3 cup bread crumbs
1 tsp. dried oregano
1 large egg
1/4 cup finely crumbled feta cheese
Salt and pepper to taste
Buns or pita bread
Toppings:
Sliced tomato
Sliced cucumber
More feta cheese
Red onion slices (see above)
Tzatziki (homemade if you prefer)
Lettuce or fresh spinach
Thaw frozen spinach and squeeze out as much moisture as possible. Chop to ensure all pieces are uniform and manageable.
Finely chop sun dried tomatoes and most of the red onion, leaving a few slices for topping the burgers.
Combine ground turkey, sun dried tomatoes, spinach, red onion, bread crumbs, egg, cheese, oregano, minced garlic and salt and pepper to taste in a bowl ensuring it is mixed well. Shape into patties - it should make about 6. I made 4 large ones.
Grill patties. Top burgers with suggested toppings or add a few of your own favourites and enjoy!
Serve with Greek salad if you like or a simple mixed green salad.
